1lb dates
1cup almonds
1/2 cup cashews
2tbs lemon juice
Zest of one lemon
1.5tsp lemon extract
In food processor mix pitted dates, almonds and cashews until formats a paste. Add lemon juice, zest and extract to mix. Pulse to combine.
Line 8x8 pan with parchment paper. Press mixture into pan and refrigerate at least 2 hours. Cut in to desired size. Top with coconut if desired. Wrap in plastic wrap for storage.
