- 1/4 cup unsalted butter (room temperature)
- 2/3 cup granulated sugar
- 1 large egg
- 1 1/2 all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 2 1/2 teaspoons Simply Organic Five-Spice Powder
- 1 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/4 teaspoon Simply Organic Cinnamon
- 1 cup buttermilk
- 3/4 cup chopped pecans
- 3/4 cup currants
Method
Step 1
Preheat the oven to 350°F with a rack placed in the center of the oven. Prepare an 8.5 x 4.5 x 2.75-inch loaf pan by spraying with baking spray and lining with parchment paper.
Step 2
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy. Add the egg and mix again until fully incorporated.
Step 3
In a small bowl, whisk together the flour, cocoa powder, five-spice powder, baking soda, salt, and cinnamon.
Step 4
Add flour mixture alternately with the buttermilk to the creamed butter mixture, beginning and ending with flour.
Step 5
Transfer the batter to the prepared loaf pan. Place in oven and bake for about 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Remove from loaf pan and cool completely before serving.
