These miso glazed vegetables are easy and delicious. The miso adds so much flavor that your family and friends will think you worked a lot harder than you did. This is a basic miso glaze. Use a sweet white miso for a sweet caramelized flavor, or a darker, older miso for a much deeper caramelized flavor. It depends on your mood or your meal — or what you happen to have in your fridge. This recipe will glaze about 1 pound of vegetables.

ingredients

  • 1 pounds cubed vegetables
  • 2 tablespoons miso
  • 2 teaspoons coconut oil, or butter
  • 1 teaspoon maple syrup
  • juice of one lemon

Method

  • Step 1

    1. Combine the vegetables, miso, butter, and maple syrup in a large skillet. Add enough water to just cover the vegetables. Bring this mixture to a boil over high heat, then lower the heat to simmer and cook, stirring as needed, until the vegetables are tender and the liquid is thick (timing will vary depending on type of vegetable). If the vegetables are not tender when the liquid is thick, add more water, a little at a time, until they are.

    2. Cook for a few more minutes to further thicken the sauce and caramelize the vegetables; you want them golden brown. The glaze will start to stick a bit.

    3. Add the lemon juice and stir to coat the vegetables with the glaze. Season with salt and pepper to taste and serve.
