ingredients

  • For the Pancakes:
  • 1 egg
  • 1/4 cup kimchi juice
  • 1 tablespoon vegetable oil
  • 1 cup flour, all-purpose or chickpea
  • 1 1/2 cup kimchi, roughly chopped
  • For the topping:
  • 1 tablespoon gochujang
  • 1/2 cup sour cream
  • 1/2 tablespoons chives

Method

  • Step 1

    For the Pancakes:

  • Step 2

    Whisk the egg, kimchi juice and oil in a mixing bowl.

  • Step 3

    Mix in the flour then add kimchi.

  • Step 4

    To a hot skillet, add oil and cook pancakes on medium low until bottom turns golden brown, about 4-6 minutes.

  • Step 5

    Flip and continue to cook until both sides of the pancake are golden brown.

  • Step 6

    For the topping:

  • Step 7

    Mix gochujang and sour cream.

  • Step 8

    Garnish with finely chopped chives. Serve.
