ingredients

  • 1 cup unsweetened vanilla dairy free milk, (i used a coconut almond blend)
  • 1/2 cup gluten free baking flour, (or any equivalent gluten free baking flour)
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 tablespoon sugar
  • 3 1/2 tablespoons butter

Method

  • Step 1

    With a large cast iron pan in the oven, pre-heat to 450 degrees.

  • Step 2

    Heat the milk in the microwave for 30 seconds, then whisk with the flour until smooth.

  • Step 3

    Add in the eggs, salt, and sugar, whisk again, and set aside.

  • Step 4

    When the oven has reached 450 degrees, turn the oven down to 400 degrees, and pull out the cast iron, adding the butter, making sure to swirl it up the sides.

  • Step 5

    Once all of the butter has melted (it will sizzle, don't fret), pour your batter into the cast iron, put back into the oven, and DON'T OPEN THE DOOR for 15-18 minutes! You don't want your Dutch Baby jiggly, but just browning when you pull it out.

  • Step 6

    Top with a squeeze of fresh lemon, a dusting of powdered sugar, and your favorite berries. Yum!
