For the Crepes:

ingredients

  • 2 large eggs
  • 2 1/4 cups milk
  • 1 3/4 cups flour
  • 2 tablespoons butter, melted
  • 1 1/2 teaspoons salt
  • 1 1/2 tablepoons maple syrup
  • 1 teaspoon vanilla extract

For the Burritos:

ingredients

  • 1 cup shredded cheddar or quesadilla cheese
  • 6 slices ham
  • 2 cups spinach, chopped
  • 1 bag frozen tater tots
  • 6 slices thick-cut bacon
  • 6 eggs, whisked
  • Sliced avocado or guacamole
  • Salsa of choice, optional
  • Hot sauce of choice, optional

Make the Crepes

Method

  • Step 1

    Add eggs, milk, flour, melted butter, salt, maple syrup, and vanilla extract to a blender. Blend until completely smooth, then cover and place in the fridge for at least one hour.

  • Step 2

    Add ⅓ - ⅔ cup of crepe batter to a large nonstick skillet over medium-low heat. You can add butter or an oil of choice to the pan, but we found that a dry skillet is better for making burrito-size crepes. Cook the crepes for 30 seconds to 1 minute on each side. Place crepes on a plate or baking sheet to cool.

Make the Crepitos

  • Step 1

    While the crepe batter rests, assemble the rest of your troops. Bake the tater tots according to package instructions. Cook the bacon and set aside. Sauté the spinach in a little bit of the bacon grease for maximum flavor. Once the spinach is cooked through, add in the whisked eggs and scramble over medium-low heat.

  • Step 2

    Place one crepe down, less toasted side up. Sprinkle a small, even layer of cheese, lay one slice of ham on top, add 6-8 tater tots, sliced avocado, the spinach scrambled eggs, and 1-2 pieces of bacon. Be careful not to overfill them. If you want to add salsa or a drizzle of your favorite hot sauce, do that now!

  • Step 3

    Fold in the left and right sides and roll the burrito from the bottom up. Focus on wrapping it as tightly as possible so the filling does not fall out. Place back onto the frying pan seam side down and toast for 1-2 minutes on each side. Or, if you have one, place them in the air fryer for 5 minutes. Serve and enjoy!
