"This weekend my wonderful mother is coming down to celebrate her birthday weekend with me (it is a month early, but this is how we operate with our busy schedules!), so I want to make her something special. This year I am going to make her a plant based #dessert, one of which I know she will surely appreciate more than your typical sugar laden cake. I made this a little while back and loved the ease of the recipe (you can use any fruit) and simply put - it tasted damn good. "

Coming from France I grew up eating apple tarts. Some of my most beautiful memories of my mama are watching her in the kitchen making apple tarts. So, finding this sweet healthier twist on an old staple was sentimental foodie heaven for me. Mmmmm. I can smell childhood smells of apples baking. So good for the soul.

 

CRUST INGREDIENTS:

1/4 cup gluten free rolled oats

1 tbsp flax seed

1/2 cup of almonds or walnuts

1 cup of pitted dates

 

DIRECTIONS:

1. Blend walnuts and dates in a food processor. This is your crust.

2. Spray a mini springform pan with cooking spray (you could use a small spring form pan, just may need to double the recipe).

3. Bake the crust in a 350° oven for about 10 mins.

 

 

FILLING INGREDIENTS:

Apples

sliced lemon juice

1 tbsp sugar

DIRECTIONS:

1. Slice up an apple and mix with a squeeze of lemon juice and sugar.

2. Arrange the apples in the pan and return to the oven for another 30 mins. Keep an eye on your pie to make sure the crust is not burning - all ovens differ slightly, so you may need to adjust the time accordingly.

3. Top with a scoop of coconut ice cream and a drizzle of raw honey.
