ingredients
- 1/2 cup extra virgin olive oil
- 6 medium leeks, trimmed, cleaned and sliced
- 2 teaspoons salt
- 1 teaspoon pepper, cracked black
- 1/2 medium grain rice
- 1 cup water
Method
Step 1
In a medium sized pot over medium-high heat, heat olive oil and add the cleaned leeks. Cook until slightly wilted and season with the salt and pepper. Add the rice and stir to combine. Add the water, bring it to a boil and then reduce to a simmer. Occasionally stir the leeks and rice gently. Continue simmering until all the water has been absorbed.
Step 2
Turn off the heat, place a towel between the pot and the lid and allow the prasorizo to rest for 5-10 minutes.
Step 3
Finish the prasorizo with a drizzle of olive oil and squeeze of lemon.
