Avocado Toast With Sautéed Spinach, Pumpkin Seed Pesto

Ingredients:
1 slice of sprouted grain bread
1/2 avocado
1 teaspoon extra virgin olive oil
1 1/2 cups spinach
Pinch of chili lime seasoning
Pumpkin Seed Pesto:
2 tablespoons raw pumpkin seeds
1 medium clove garlic
1/4 cup fresh basil leaves
1 teaspoon extra-virgin olive oil
Juice of 1 small lemon
1. Toast sprouted brain bread until just golden. Spread avocado on one side of the toast, mashing it with a fork.
2. In a medium pan on medium-low heat, heat up olive oil. Add spinach, and saute for a minute or two until wilted. Transfer to the top of toast.
3. Prepare pesto by blending ingredients in a food processor or blender until smooth. Spread on the top of toast, and top with chili lime seasoning.
