For the carne asada marinade:

ingredients

  • 2 lbs skirt steak, trimmed of excess fat
  • 1/2 cup fresh orange juice
  • 2 limes, juiced
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • 4 garlic cloves, minced
  • 1/2 cup cilantro, chopped
  • 1/2 jalapeno, seeds removed & finely chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

For the avocado salsa:

ingredients

  • 2 medium avocados, diced
  • 1/4 red onion, finely chopped
  • 3 tablespoons cilantro, chopped
  • Fresh lime juice, to taste.
  • Salt, to taste.

Method

  • Step 1

    Lay prepped skirt steak in a large baking dish.

  • Step 2

    To make the marinade, whisk together orange juice, lime juice, olive oil, vinegar, garlic, cilantro, jalapeno, salt and pepper together.

  • Step 3

    Pour marinade over steak and cover with plastic wrap. Marinate for 1-8 hours.

  • Step 4

    Before grilling make the avocado salsa by mixing avocado, cilantro and red onion together in a bowl. Mix in lime juice and season to taste.

  • Step 5

    Cover the salsa and keep it chilled in the refrigerator until ready to serve.

  • Step 6

    Heat an outdoor grill to high heat. Once hot, grill the carne asada for 4-5 minutes per side or until it reaches your preferred temperature. Note: For medium carne asada, cook until a meat thermometer reads 140 degrees.

  • Step 7

    Once done, transfer carne asada to a tray and let it rest, covered with foil for 5 minutes.

  • Step 8

    Slice carne asada against the grain and serve immediately with the avocado salsa.
