ingredients

  • 1 chicken (1-1.2kg)
  • 900g light soya sauce
  • 300g dark soya sauce
  • 520g rock sugar
  • 15g star anise
  • 150g Hua Diao wine or any other Chinese wine
  • 80g ginger
  • 80g spring onion
  • 1.5litres of water

Method

  • Step 1

    Prepare master stock: Deep-fry ginger and spring onion until golden brown, add in remaining ingredients and bring it to a boil. Turn to low heat and continue cooking for 20 minutes.

  • Step 2

    Rinse and pat dry chicken, put in master stock with the chicken breast facing down. Cover and bring it to a boil. Turn off heat and leave for 20 minutes. Bring back to boiling and turn off the heat again.

  • Step 3

    Flip the chicken and soak for another 10 minutes, remove from pot leave to cool on a wire rack for 15 minutes. Transfer to a plate.

  • Step 4

    Bring a bowl of master stock to boil, thicken with starch and drizzle over chicken.

  • Step 5

    Serve hot with boiled rice!
