Pesto with White Wine Vinegar

"Pesto is sooooo easy to make, and there are so many different ways of doing it, that there is absolutely no need to spend the money buying the jarred stuff (full of preservatives and other nasties). How do you like your pesto?"

Ingredients:

1/3 cup toasted pine nuts

3 cloves sautéd garlic

arugula

spinach

a bit of basil

olive oil

a splash of white wine vinegar

salt

garlic powder

pan-seared heirloom cherry tomatoes

Directions:

Combine all ingredients, except for cherry tomatoes, in a food processor or blender. Enjoy with pasta of your choice and top with cherry tomatoes.
