French Apple Pie
Ingredients:
1 shortcrust pastry (recipe shared yesterday on my page)
8 apples (golden and organic preferably)
1/4 sugar + 1 tsp
1 tbsp butter
1 eagg beaten with a splash of milk
Directions:
Peel and cut 5 apples into small cubes
In a saucepan, heat sugar on medium heat until it melts and turns into a golden caramel (watch carefully as it can burn easily). Add apple cubes, cover and turn heat on medium-low. Cook for 30 min, puree and reserve.
Preheat the oven to 350 degrees F. Roll out dough (1/10 inch thick) and press into buttered pie dough. Cut out excess dough. Reroll scrapes into a long shape and cut thin stripes. Make the braid. • brush top of the dough in the pan with the eggwash and press the braid to adhere. Cut out flowers to decorate and hide the braid junctions.
Cut remaining apples in half lenghtwise and core. Mandolin into thin slices.
Put applesauce into the pie dough and place apple slices harmoniously on top. Sprinkle with remaining sugar and butter. Brush braid with egg wash and bake for 50 min or until dough is golden everywhere. Bon appétit!
