Broccoli Cauliflower Kugel Muffins

"Need a healthy side dish to add to your Shabbat meal These broccoli cauliflower kugel-muffins are a great solution. They're delicious, healthy and reheat really well! "

1 Head of broccoli or 1 bag frozen 1 head of cauliflower or 1 bag frozen 1 onion 1/2 box of mushrooms ¼ cup of bread crumbs salt, pepper and garlic powder to taste 1/8 cup of oil 2 eggs (optional if vegan) Fresh thyme Recipe: Put the broccoli and cauliflower in a pot of water and bring to boil, cook for another 5 minutes on low. Alternatively put them in a microwave safe bowl with water and microwave for three minutes at a time until tender. Drain the veggies and let it cool. Sauté the onions and the mushrooms. Mix all the ingredients together and lightly use an immersion blender to cut up all the veggies. Pour into a greased pan or into muffin cups. Bake 350 F for 35-40 minutes. Optional: put breadcrumbs on top and fresh thyme and broil for ten minutes at the end.
