ingredients
- 2 2/3 cups fresh strawberries, stems removed cut in half
- 1 1/2 ounces lavender simple syrup
- 1 1/2 ounces lemon juice
- 1/4 cup monkfruit sugar
- 2 ounces strawberry puree
- 1 1/2 ounces Aperol
- sparkling rosé
- sparkling water
Method
Step 1
In a medium bowl, toss strawberries with sugar, lemon juice, and lavender simple syrup and allow to macerate for 1 hour.
Step 2
Pour the mixture in a blender and blend until liquified. Strain through a fine mesh strainer in a large glass.
Step 3
In a coupe glass, add Strawberry Purée and aperol. Top with sparkling rose and sparkling water
