S'mores Tacos

"It only seemed obvious that the best vessel for consuming s'mores would come in the "taco" format. So, that's exactly what I did-- I created a taco shell out of graham crackers and stuffed it with chocolate and marshmallows. One bite and I exclaimed, "I just found Jesus"."

ingredients

  • 1 1/2 packs Graham Crackers
  • 9 large Marshmallows
  • 1 bar Intense Dark Ghiradelli Chocolate
  • 3/4 cup Unsalted Butter

Method

  • Step 1

    Break up the graham crackers with your hands above a kitchen processor. Pulse the crackers until their fine but not dust. They should be the consistency of french-press coffee grinds.

  • Step 2

    Pour the graham crackers into a large bowl and mix in the melted butter. Mix the butter until you have a wet-sandy texture. Press the mix into a taco-holder stand that's laced with parchment paper and shape into a "v". Place in the freezer for 45 minuets or until completely hardened.

  • Step 3

    Set your oven to it's broil setting. Arrange the marshmallows on a small sheet tray or pie tin and place under the broiler. Keep an eye on it. Once they're blackened on top pull them out to rest.

  • Step 4

    Remove the graham cracker "taco" shells from the freezer and carefully release them from the stands. Stuff three marshmallows in and top with the Ghiradelli chocolate. Beautiful.
