Baguettes

ingredients

  • 5 grams Instant Yeast
  • 375 grams Warm Water
  • 500 grams All-purpose Unbleached Flour
  • fat pinch Kosher Salt

Method

  • Step 1

    Mix the yeast into the warm water and add a spoonful of the flour. Let it rest for 5 to 10 minutes. Check for activation. If there is no froth or bubbling the yeast is probably dead. Discard and start over.

  • Step 2

    Add the remaining flour and salt and mix until completely combined with no pockets of flour. This dough is incredibly stick, don't worry. Cover the dough with plastic wrap and proof for 20 minutes.

  • Step 3

    Lube your hands with a neutral cooking oil like canola. Nuzzle your hand beneath the dough and pull a portion of it, stretching up and over itself. Repeat about 3 times around the ball of dough. Cover and proof for another 30 minutes. Perform this stretch and fold technique two more times or until the dough is able to stretch without tearing.

  • Step 4

    Oil a work surface and roll the ball onto the counter. Divide the ball into 5 different portions. Oil plastic wrap and cover, resting for about 5 minutes. Once relaxed, roll the balls into baguette shape by folding and tucking it twice through the center and then using both hands to elongate the dough. Place on a sheet tray lined with parchment paper and proof one more time-- until doubled in size-- about 45 to 55 minutes.

  • Step 5

    Preheat the oven to 450 and place a tray of water on the bottom rack. Creating a steamy environment is key to the fluff of this bread. Spray the dough generously with water and place in the oven. Spray the rolls every 5 minutes while rotating in the oven-- 15-20 minutes or until golden in color.

  • Step 6

    Rest the bread for an hour before cutting open.

Basil Mayonnaise

ingredients

  • 1/2 cup Basil Leaves
  • 1/4 teaspoon Apple Cidar Vinegar
  • 1/4 teaspoon Fresh Lemon Juice
  • 1 teaspoon Extra Virgin Olive Oil
  • fat pinch Kosher Salt

Basil Mayonnaise

  • Step 1

    Put all ingredients into a food processor and blend till smooth. Add canola oil to thicken the mayo if it’s too thin. Chill for 1 hour before serving.

Jesse's Club Sandwich

ingredients

  • 2 slices of Thick-cut Bacon
  • 6 slices of Roasted Turkey
  • 6 slices of Smoked Ham
  • 3 tbsp Basil Mayo
  • 1 slices of center cut Brie Cheese
  • Leafy Green Lettuce

Jesse's Club Sandwich

  • Step 1

    Slice the baguette in half and spread the basil mayo throughout the roll.

  • Step 2

    Layer the meat by staggering each. Place brie on top and stick under broiler for 1-2 minutes until cheese is melted and bread is slightly toasted.

  • Step 3

    Add bacon, lettuce and tomato to the sandwich and stuff your face in 3 to 4 bites.
