ingredients
- 2 1/3 cups Bread Flour
- 3/4 teaspoon Baking Soda
- 1 teaspoon Salt
- 2 1/2 ounces 55% Chocolate
- 2 1/2 ounces 72% Chocolate
- 2 1/2 ounces Milk Choclate
- 1/2 pound Cold Unsalted Butter
- 1 cup Packed Dark Sugar
- 3/4 cup Sugar
- 1 Whole Egg
- 1 Egg Yolk
- 1 Vanilla Bean
- 1 tbsp Dark Rum
- Flakey Salt for Garnish
Method
Step 1
Deseed the vanilla bean and massage it into the white sugar until completely incorporated with no clumps.
Step 2
Cream the both sugars and butter until smooth. About 10 minutes.
Step 3
Add dry ingredients and fold in being sure not to over mix.
Step 4
Form into baseball sized balls and place onto a cookie sheet. Chill for 24 hours.
Step 5
Lightly salt the top before baking at 400 for 15 minutes or until gloss doesn't appear on cookie. Cool for 10 minutes.
