ingredients

  • 2 1/3 cups Bread Flour
  • 3/4 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 1/2 ounces 55% Chocolate
  • 2 1/2 ounces 72% Chocolate
  • 2 1/2 ounces Milk Choclate
  • 1/2 pound Cold Unsalted Butter
  • 1 cup Packed Dark Sugar
  • 3/4 cup Sugar
  • 1 Whole Egg
  • 1 Egg Yolk
  • 1 Vanilla Bean
  • 1 tbsp Dark Rum
  • Flakey Salt for Garnish

Method

  • Step 1

    Deseed the vanilla bean and massage it into the white sugar until completely incorporated with no clumps.

  • Step 2

    Cream the both sugars and butter until smooth. About 10 minutes.

  • Step 3

    Add dry ingredients and fold in being sure not to over mix.

  • Step 4

    Form into baseball sized balls and place onto a cookie sheet. Chill for 24 hours.

  • Step 5

    Lightly salt the top before baking at 400 for 15 minutes or until gloss doesn't appear on cookie. Cool for 10 minutes.
