ingredients

  • 8 tbsp Unsalted Butter
  • 2 cups Fresh Corn Kernels
  • 1/2 medium diced Onion
  • 1/4 medium diced Roasted Red Bell Pepper
  • 1/4 medium diced Roasted Yellow Bell Pepper
  • 1/2 pound Finely Grated Parmesan
  • 1 box Jiffy Cornbread Mix
  • 1/4 cup All-purpose Flour
  • 1/2 cup Cilantro
  • 1 deseeded and finely diced Jalapeno
  • 1 Whole Egg
  • 1 cup Plain Yogurt
  • 1/4 teaspoon Cayenne
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method

  • Step 1

    Set oven rack to the lowest position in the oven and heat to broil. Place the corn kernels and bell peppers on a sheet tray in broil from some color.

  • Step 2

    Melt the butter in a 9 inch cast-iron skillet until melted and slightly bubbling without color.

  • Step 3

    Mix all the ingredients in a large bowl before adding to the cast-iron and flattening out. Place in the oven at 400 for 40 minutes or until a toothpick runs clean and dry when poked in the center.
