Aka-miso Sardines

ingredients

  • 4 ounces Sardines
  • 2 tbsp Aka Miso (Red Miso Paste)
  • 1/2 teaspoon Tamari
  • 1/2 teaspoon Mirin
  • 1 teaspoon Rice Wine Vinegar
  • 1 teaspoon grated fine Ginger
  • 2 teaspoon sliced Green Onion
  • 2 teaspoon chiffonade Basil / Mint
  • 1 teaspoon Sesame Seeds

Method

  • Step 1

    Start by carefully chopping up your sardines. You don't want any mush. You want chunks of fish for this to hold weight. Set aside.

  • Step 2

    Combine the aka miso, tamari, mirin, rice wine vinegar and grated ginger in a fancy bowl and whisk till combined.

  • Step 3

    Add the sardines and fold into the mixture. Fold in the basil/mint chiffonade and top with sesame seeds.
