Ingredients 2 pounds (3 med size) peeled & quartered 1/2 cup coconut milk1 small clove garlic, minced1 tsp ground cumin1/2 tsp kosher or sea salt1/4 cup pepitas1 tsp sriracha sauce, optional2-3 tbsp fresh cilantro, optional
InstructionsIn saucepan combine yams, milk, garlic and salt. Cook covered until they fall apart about 20-25mins, stirring occasionally. Mash potatoes and transfer to serving dish and top with pepitas. Add cilantro and sriracha, if using.
