2 pounds (3 med size) peeled & quartered
1/2 cup coconut milk
1 small clove garlic, minced
1 tsp ground cumin
1/2 tsp kosher or sea salt
1/4 cup pepitas
1 tsp sriracha sauce, optional
2-3 tbsp fresh cilantro, optional
In saucepan combine yams, milk, garlic and salt. Cook covered until they fall apart about 20-25mins, stirring occasionally.
Mash potatoes and transfer to serving dish and top with pepitas. Add cilantro and sriracha, if using.
