Vegetable Ratatouille

Ingredients:

caramelized onions

tomato sauce

zucchini

sweet potato

tomato

olive oil

salt & pepper

Directions:

Start by spreading caramelized onions into your baking dish. Top with a little tomato sauce & layer with a mix of zucchini, sweet potato & tomatoes. Drizzle with olive oil, and season with salt, pepper & chopped fresh thyme.

Then bake at 425°F until veggies are browned and tender, about 30 minutes.
