ingredients
- 4 croissants
- 3 eggs
- 220 millileters double cream
- 350 millileters whole milk
- 150 grams strawberries
- Strawberry jam and butter (enough for 4 croissants)
- 1 teaspoon vanilla extract
Method
Step 1
Demerara sugar to sprinkle and cream to serve. Pre heat your oven to 180c. Pour the milk and cream into a pan and heat through until it’s about to reach boiling point. Remove from the heat.
Step 2
In a medium bowl, add the eggs, sugar and vanilla and whisk. Then pour in the cream and milk mixture and stir until combined.
Step 3
Halve your croissants, spread with butter and jam and close together again. Arrange them in an ovenproof dish and pour over your custard mix. Dot the strawberries around on top and sprinkle with Demerara, and bake for 30 minutes or until set. If it starts to brown a little too much cover with foil for the remaining bake time.
