This is a perfect example that you can eat a lot of food for lower calories and still so delicious while also losing weight, and the best part is it’s so easy to make! So much flavor coming from every component in this dish, the chicken is juicy & well seasoned, rice is flavorful and that Green sauce brings it all together so well!

This high protein, low carb meal is filling and packed with flavor. Prepare the chicken in advance if you want to meal prep and make a few of these burrito bowls to enjoy for lunch or dinner throughout the week.

If chicken isn't your thing, add the ingredients of the marinade to coat shrimp, tofu, or fish.

Chicken Marinade

ingredients

  • 300 grams raw chicken breast, cut into cubes
  • 1 teaspoon garlic powder
  • 1 heaping teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon red chili flakes
  • 1 teaspoon salt and pepper
  • 1 lime, juiced

Method

  • Step 1

    Mix till it changes color.

  • Step 2

    Cook the chicken for 4 mins on each side and set aside. I used cooking spray but you can use olive too

Green Sauce

ingredients

  • 1/2 avocado
  • 100 grams fat-free or low-fat greek yogurt
  • Handful of coriander or cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt and pepper
  • 1/2 lime, juiced

Mexican Rice

  • Step 1

    Season with the same spices you used for the chicken with 1-2 tbsp of tomato paste.

To Serve

ingredients

  • 140 grams Mexican rice
  • Chicken pieces
  • Shredded lettuce
  • Bell peppers and onion
  • 40 grams sweet corn
  • 40 grams black beans
  • 20 grams low fat sour cream or yogurt
  • Generous amount of green sauce
