- 1 (14-ounce) can full fat coconut cream
- 2 tablespoons cornstarch
- 2 tablespoons maple syrup
- 1 tablespoon coconut sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon agar agar
- Pinch of salt
Method
Step 1
In a blender, add all of the ingredients for the crème brûlée, except for the coconut sugar, until you have a smooth and homogeneous mixture.
Step 2
Then pour the mixture into a medium saucepan over medium-low heat. Frequently stir the mixture and cook until thick, about 10 to 15 minutes. Do not allow it to boil and lower the heat if necessary.
Step 3
Using a ladle or spouted pitcher, divide the cream between 4 small crème brûlée molds. Let cool for about an hour at room temperature, and then transfer to the refrigerator to firm.
Step 4
When ready to serve, sprinkle sugar evenly over each crème brûlée. Use a torch to caramelize the top.
Step 5
Make sure to caramelize all the ones you serve immediately, otherwise the sugar will soften in the fridge. Enjoy!
