Vegan Blueberry Banana Bread

  • 1 tablespoon flax flour
  • 2 tablespoons water
  • 1 cup spelt flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 bananas
  • 1/2 cup blueberries
  • 1/4 coconut oil
  • 1/3 cup maple syrup
  • 1/2 cup plant-based milk
  • 2 teaspoons vanilla extract


  • Step 1

    Preheat oven to 350°F. In a small bowl, add in the flax flour with the water and let stand a few minutes.

  • Step 2

    Then, using a stand or electric hand mixer, mix the bananas, plant-based milk, coconut oil, maple syrup and vanilla.

  • Step 3

    Then in a large bowl, mix all the dry ingredients, flour, baking soda, baking powder and cinnamon together until combined.

  • Step 4

    Add the wet ingredients to the dry ingredients and the blueberries. Mix with a wooden spoon until it is well mixed.

  • Step 5

    Pour the mixture in the mold and bake for 20-25 minutes, or until a toothpick comes out clean.

  • Step 6

    Let cool a few minutes and enjoy.
