  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 3 garlic cloves, minced
  • 1 small onion, chopped
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon smoked paprika
  • 1 (28 ounce) can Muir Glen Fire Roasted Diced Tomatoes
  • 1 1/2 tablespoons gochujang
  • 1 tablespoon brown sugar
  • 1 cup shredded cheddar cheese
  • 2 cups corn chips (such as Fritos)
  • 1 green onion, sliced for garnish

Method

  • Step 1

    In a large pot, heat vegetable oil over medium-high heat.

  • Step 2

    Cook beef for 6 to 8 minutes, breaking up and stirring.

  • Step 3

    Add minced garlic, chopped onions and salt. Cook, sautéing occasionally, until onions have softened.

  • Step 4

    Stir in the salt, cumin, coriander, smoked paprika, Muir Glen Fire Roasted Diced Tomatoes, gochujang, and brown sugar.

  • Step 5

    Bring mixture to a boil. Reduce heat and simmer, uncovered, for 15 minutes.

  • Step 6

    Transfer to a serving dish. Top with cheese, corn chips and green onions.
