Shortbread Layer

ingredients

  • 1 ⅓ cups almond flour
  • 3 tablespoons maple syrup
  • 3 tablespoons coconut oil

Caramel Layer

ingredients

  • ½ cup runny peanut butter
  • 3 tablespoons maple syrup
  • 2 teaspoons coconut oil

Chocolate Coating

ingredients

  • 1 cup (200g) dark chocolate
  • 1 tablespoon coconut oil

Method

  • Step 1

    Preheat the oven to 325°F.

  • Step 2

    To make the shortbread layer, in a bowl, mix almond flour, 3 tablespoons maple syrup, and 3 tablespoons coconut oil to form a dough. Press the dough into the bottom of a pan lined with parchment paper and bake for 15 minutes. Allow it to cool for 5 minutes.

  • Step 3

    While the shortbread layer is cooling, mix runny peanut butter, 3 tablespoons maple syrup, and 2 teaspoons coconut oil. Spread this mixture on top of the cooled cookie layer. Place the pan in the freezer until the caramel layer is solid, then cut into bars.

  • Step 4

    Melt dark chocolate and 1 tablespoon coconut oil in the microwave. Coat each bar with the chocolate, drizzle with some more chocolate (optional), and top with a sprinkle of sea salt. Freeze for 5 minutes to set

  • Step 5

    Remove from the freezer, and enjoy!
