- 12 ounces gluten free pasta, cooked according to package instructions
- 1 large avocado, pitted
- 1 cup basil
- 1/ 3 cup walnuts
- 1 small lemon, juiced
- 1/ 2 cup olive oil
- 1 tablespoon chopped garlic
- 2 tablespoons nutritional yeast
- 1/ 2 teaspoon salt
- 1/ 4 teaspoon pepper
- crushed red pepper flakes, optional, for garnish
Cook pasta according to package, drain, and set aside.
In a high powered blender or food processor combine the avocado, fresh basil, walnuts, lemon juice, olive oil, nutritional yeast, garlic, salt, and pepper. Pulse ingredients until it becomes smooth and creamy.
Toss cooked pasta with the Avocado Pesto Sauce and eat immediately. Garnish with crushed red pepper (optional).
