ingredients

  • 2 cups mung beans, sprouted
  • 1 small red onion, chopped
  • 1/2 cup mint, leaves, picked
  • 1/2 cup parsley, leaves, picked
  • 1 small kohlrabi, chopped
  • 2 Sicilian cedro or grapefruits, cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 lemon, juiced

Method

  • Step 1

    In a large bowl, wash the sprouts by running them under cold water and rinsing until the water runs clear. Using paper towel, pat dry and transfer to a clean large bowl.

  • Step 2

    In the same bowl, combine red onion, mint, parsley, kohlrabi, and Sicilian cedro. Toss with the olive oil, salt, pepper and lemon juice until everything is well coated.

  • Step 3

    Adjust seasoning to taste.
