ingredients
- 2 cups mung beans, sprouted
- 1 small red onion, chopped
- 1/2 cup mint, leaves, picked
- 1/2 cup parsley, leaves, picked
- 1 small kohlrabi, chopped
- 2 Sicilian cedro or grapefruits, cubed
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 lemon, juiced
Method
Step 1
In a large bowl, wash the sprouts by running them under cold water and rinsing until the water runs clear. Using paper towel, pat dry and transfer to a clean large bowl.
Step 2
In the same bowl, combine red onion, mint, parsley, kohlrabi, and Sicilian cedro. Toss with the olive oil, salt, pepper and lemon juice until everything is well coated.
Step 3
Adjust seasoning to taste.
