For the Potatoes
- 1 package frozen tater tots
- 1 large cucumber, diced
- 1 can corn, drained
- 1/2 cup chopped fresh basil
- 1 small red onion, diced
- 1 (10 ounce) can Red Gold Original Diced Tomatoes with Green Chilies
- 1 (14.5 ounce) can Red Gold Diced Tomatoes

For the Balsamic Glaze Dressing
- 3 tablespoons extra virgin olive oil
- 1 tablespoon Dijon mustard
- 2 tablespoons balsamic vinegar
- 1 tablespoon sugar
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Method
Step 1
Preheat the oven to 425°F. Add taters to a nonstick baking tray, spacing them apart. Bake in the oven for 8-10 minutes.
Step 2
Take out of the oven and use a flat glass cup to mash the tater tots. Put them back in the oven. Bake for 15 to 20 minutes more until golden and crispy.
Step 3
In a serving bowl add cucumbers, tomatoes, basil, onion and corn.
Step 4
In a separate bowl make dressing by mixing oil, Dijon mustard, balsamic vinegar, sugar salt and pepper.
Step 5
Pour the dressing over the salad and mix well. Add crispy tater tots right before serving.
