Pasta salad that can truly be classified as a salad!

A friend of mine was asking me for a salad recipe, and I was reminded of this beauty. It’s a sure favorite, and I incorporated olives to my original recipe to add some fun.

If you want a pasta salad without the guilt, this is for you. The dressing is a garlicky, lemony mix of mayonnaise and yogurt and the kale adds texture and nutrients to this delicious dish. It even tastes better the next day!

Garlic-Parmesan Pasta Salad
6 cups cooked fusilli
3 cups chopped kale
1 cup diced colored peppers
1/2 red onion, finely diced

1/2 cup light mayo
1/2 cup Greek yogurt
1/4 c olive oil
2 cloves garlic, mashed
2 tbs apple cider vinegar
1/4 c lemon juice
1-2 cups sliced red tomatoes
1/4 cup Parmesan
1/2-1 cup sliced black olives, drained @pearls_olives
Salt and pepper
1. Boil pasta, drain, salt and set aside.
2. Dice kale, peppers,onions and mix with cooled pasta. Add olives.
3. Whisk together mayo, yogurt, olive oil, garlic, vinegar and lemon juice. Pour over pasta salad. Salt and pepper to taste.
4. Add tomatoes and Parmesan - coarse salt and pepper to taste.
Chill for at least half an hour for flavors to infuse. Enjoy!
