I love creating avocado toast on lazy weekends. It's such a simple way to showcase your beautiful farm fresh produce and the variety of flavors you can include is incredibly satisfying. I’m so happy to share this recipe featuring heirloom beets, organic rye toast, and Vital Farms eggs.

I’m so incredibly excited to celebrate National Farmers Day with Vital Farms. As an urban farmer, it became incredibly clear over the past year just how vital my role is in community. Growing food, harvesting crops, and distributing organic produce is such an essential part of maintaining the health of our communities. I’m passionate about where I source my food, and if it doesn't come from my own farm or garden, then I only source from small ethical farms. These amazing hens are able to forage outdoors and the land they are raised on is never treated with herbicides or pesticides.

Note: To prepare the soft-boiled eggs, bring a medium pot of water to a boil and add egg (lower them into the water carefully with a slotted spoon) and cook over a gentle boil for exactly 6 ½ minutes. Set eggs in an ice bath to cool, then when cool enough to handle, peel the eggs.

ingredients

  • 1/4 cup organic cream cheese
  • 1 tablespoon beet juice
  • 2 slices rye bread, lightly toasted
  • 1 Vital Farms Pasture-Raised Egg, soft boiled and sliced (see note)
  • 1 medium Haas avocado, pitted and sliced
  • 1 sprig of dill
  • Salt and pepper, to taste
  • Red chili flakes, to taste

Method

  • Step 1

    In a small bowl, whisk together beet juice and cream cheese. Refrigerate for 5 minutes.

  • Step 2

    After it has chilled, spread cream cheese evenly across both pieces of toast, then top with avocado and Vital Farms soft boiled egg.

  • Step 3

    Divide dill spring in half and distribute evenly between both slices of toast Season to taste with salt, pepper, and chili flakes to taste.
