Mushroom Sauce Ingredients:
5 oz. sliced mushrooms of your choice
1/2 cup beef broth
1 large shallot, finely chopped
2 tbsp cooking fat (saute)
1 1/2 tbsp ghee (stir-in)
Chopped basil/chive/scallion
Salt and pepper to taste
Mushroom Sauce Instructions:
Saute shallots with 2 tbsp coooking fat with a pinch of salt until slightly translucent. Add mushrooms & saute until they turn softer. Season with a pinch of salt. Add beef broth. Turn high heat. When the sauce is reduced by half, mix-in ghee and chopped herbs. Season with S + P to taste.
Citrus Cilantro Sauce Ingredients:
1 1/4 cup cilantro
1 tbsp water
2 tbsp extra virgin olive oil
Half lemon juice
1 small garlic clove
1/4 tsp sea salt + 1/4 tsp cumin powder
1 large shallot
1/2 tbsp apple cider vinegar
Citrus Cilantro Sauce Instructions:
Blend all ingredients in a food processor until fine. The sauce is best used within the same day for maximum freshness and flavor.
