Made with homemade rice milk, cinnamon, vanilla, almond extract, and naturally colored using matcha powder, this classic drink will put a spring in your step, and is a refreshing way to celebrate the holiday! Horchata Verde
1 cup (200g) uncooked long-grain rice
5 cups water
1 cup milk of any kind
1 1/2 teaspoons vanilla extract
1 3/4 teaspoons ground cinnamon
3/4 cup granulated sugar
1/4 teaspoon almond extract
4 teaspoons matcha powde
Place the rice in a fine-mesh strainer, and rinse until the water runs clear. Drain and transfer to a blender. Add the water, and blend for 1 minute. Let sit at room temperature for 3 hours.
Strain through a nut milk bag or cheesecloth into a pitcher, discard the solids, then pour back into the blender. Add the milk, vanilla, cinnamon, sugar, almond extract, and matcha, and blend until smooth. Pour into the pitcher and refrigerate until chilled. Serve over ice, and enjoy!
