ingredients

  • 4 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 2 large eggs
  • 1/3 cup plain greek yogurt
  • 1/4 cup buttermilk, or kefir
  • 1 teaspoon or vanilla extract vanilla paste
  • 5 ripe bananas, (3 mashed, 2 thinly sliced lengthwise)
  • 1/2 cup semisweet chocolate chips

Method

  • Step 1

    Preheat oven to 350°F/177°C, and grease an 8-inch square or 9-inch circle baking pan or cast-iron skillet.

  • Step 2

    Place the butter in a small saucepan over medium-low heat, and cook, stirring often until the butter melts, the foam subsides, and the solids on the bottom of the pan turn a dark, nutty brown. Quickly pour the butter into a large mixing bowl to prevent burning, and set aside to cool briefly.

  • Step 3

    In a medium bowl, whisk together the flour, almond flour, baking soda, cinnamon, ginger, and salt. Set aside.

  • Step 4

    Once the butter has cooled slightly, add the sugar, eggs, yogurt, buttermilk, and vanilla. Whisk until smooth, then use a spoon or rubber spatula to stir in the mashed bananas. Add the flour mixture and stir until just blended and no streaks of flour remain. Fold in the chocolate chips.

  • Step 5

    Pour the batter into the prepared baking pan, and spread into an even layer. Top with the sliced bananas. Bake for 55-60 minutes, until a toothpick inserted into the center comes out clean. Let cool for 15 minutes before serving.
