Salted caramel syrup, Frangelico and vodka - who could possibly resist!

Ingredients

Caramel Martini

2 oz vodka
1 oz salted caramel simple syrup (see below)
1/2 oz frangelico liqueur

In a cocktail shaker, combine the vodka, simple syrup, and frangelico. Fill the shaker with ice and shake vigorously for 15 seconds. Strain into a chilled martini glass, and enjoy!

Salted Caramel Simple Syrup
1 cup granulated sugar
1 teaspoon corn syrup
3/4 cup water, divided
1 teaspoon vanilla extract
Generous pinch of flaky sea salt

Method

In a small saucepan, combine the sugar, corn syrup, and 1/4 cup of the water. Place over low heat and stir occasionally until the sugar dissolves. Then raise the heat to medium high, cover the pan, and bring to a simmer. Once boiling, keep covered and cook for 2 to 3 minutes. Remove the cover and continue to simmer and stir until the syrup reaches an amber color. Remove the pan from heat, then VERY carefully and slowly pour the remaining 1/2 cup of water into the pan, stirring as you pour—the caramel will sputter and steam intensely when the water is added, so be careful. Once the water is stirred in, add the vanilla and salt, and stir to combine. Transfer to a heatproof container and keep refrigerated until ready to use. Makes about 1 cup of syrup, enough for about 8 cocktails.
