ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 cup caonla/vegetable oil
  • 1 teaspoon vanilla
  • 1 tablespoons vinegar
  • 1 1/2 cups cherry juice
  • 2 cups pitted cherries
  • 2 tablespoons cornflour
  • 2 tablespoons sugar
  • 1 tablespoons amaretto
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoons vanilla
  • 1 1/2 cups warm water

Method

  • Step 1

    Preheat oven to to 350 degrees. In a large bowl, add oil and sugars and whisk with a hand mixer. In a separate bowl, sift together flour, coca powder, baking soda and salt.

  • Step 2

    Combine half the dry ingredients into the large bowl. Add vanilla, vinegar and warm water. Add rest of the dry ingredients and combine with spatula.

  • Step 3

    Pour cake batter into two 8 inch baking pans. Bake for 20-25 minutes until cooked through. Remove from the oven and leave in the pan until cooled.

  • Step 4

    Pour cherry juice into a medium sauce pan on medium/low heat. Add sugar and cornflour and mix with a whisk until smooth and not lumps.

  • Step 5

    Add pitted cherries and amaretto and continue to whisk for another minute. Remove from the heat and it will continue to thicken as it cools. Let it cool before assembling the cake.

  • Step 6

    Using a stand mixer or a hand mixer whip heavy cream, powdered sugar and vanilla until it forms stiff peaks. (Complete this step just prior to assembly as the whipped cream will begin to fall)

  • Step 7

    Place a flattened cake onto a serving tray. Layer with cherry filling and spread evenly. Layer with whipped cream and spread evenly. Top with second flattened chocolate cake.

  • Step 8

    Top second cake layer with most of the whipped cream (leave some whipped cream to pipe decoration if desired).

  • Step 9

    Evenly spread whipped cream on the top and sides of the cake. Pipe decorations on the top of the cake. Garnish with shaved chocolate and fresh cherries.
