For the Marinade:

ingredients

  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 3 tablespoons avocado oil
  • 2 tablespoons orange juice
  • 1 tablespoon chili powder
  • 2 teaspoons garlic, minced
  • 2 teaspoons cumin, ground
  • 2 pounds skirt steak, cut into 1/2" pieces

For Serving:

ingredients

  • 1 small white onion, diced
  • 11 bunch cilantro, chopped
  • 4 limes
  • 12 small flour or corn tortillas

Method

  • Step 1

    In a medium bowl, combine soy sauce, lime juice, avocado oil, orange juice, chili powder, garlic and cumin. Transfer to a resealable bag or food-safe container. Add steak pieces, coating generously with marinade. Marinate, refrigerated, for at least 1 hour and up to 4 hours.

  • Step 2

    When ready to cook, preheat a cast iron grill pan or skillet on an outdoor grill to medium heat (350-400 degrees F).

  • Step 3

    Remove steak from marinade and cook in hot skillet on grill for about 5-7 minutes on each side until internal temperature reaches 145 degrees F. Remove steak from grill and let rest for about 5 minutes.

  • Step 4

    While steak is resting, combine white onion and cilantro, set aside. Grill tortillas on grill grates for about 15 seconds on each side. Cut 2 limes in half and grill on grill grates, cut side down, for 1-2 minutes. Slice remaining limes for serving.

  • Step 5

    To build tacos, fill each tortilla with steak, onions and a squeeze of grilled lime. Serve with more lime wedges.
