ingredients
- 2 slices sourdough bread
- 2 tablespoons whipped labneh
- 4 cherry tomates
- 1/2 avocado
- 1 hard boiled egg
- 2 tablespoons boiled chickpeas
- Fresh thyme
- Extra virgin olive oil
- Lemon juice
- Mixed seeds (red pepper flakes, dried chilli seeds, chia seeds, nigella seeds & sesame seeds)
- Sea salt flakes
Method
Step 1
Toast the sourdough slices.
Step 2
Marinate the chickpeas with some evoo, lemon juice and mixed seeds.
Step 3
Top the toasts with whipped labneh spread.
Step 4
1st toast: Top with tomato & avocado slices, a drizzle of evoo & lemon juice, sea salt flakes, mixed seeds & fresh thyme
Step 5
2nd toast: Top with chickpeas, egg slices, sea salt flakes & fresh thyme.
