ingredients

  • 2 slices sourdough bread
  • 2 tablespoons whipped labneh
  • 4 cherry tomates
  • 1/2 avocado
  • 1 hard boiled egg
  • 2 tablespoons boiled chickpeas
  • Fresh thyme
  • Extra virgin olive oil
  • Lemon juice
  • Mixed seeds (red pepper flakes, dried chilli seeds, chia seeds, nigella seeds & sesame seeds)
  • Sea salt flakes

Method

  • Step 1

    Toast the sourdough slices.

  • Step 2

    Marinate the chickpeas with some evoo, lemon juice and mixed seeds.

  • Step 3

    Top the toasts with whipped labneh spread.

  • Step 4

    1st toast: Top with tomato & avocado slices, a drizzle of evoo & lemon juice, sea salt flakes, mixed seeds & fresh thyme

  • Step 5

    2nd toast: Top with chickpeas, egg slices, sea salt flakes & fresh thyme.
