ingredients

  • 2 slices Sourdough toasts
  • 2 tablespoons Whipped labneh
  • 100 grams Smoked salmon
  • 1 sliced Green tomato
  • 1 sliced Red onion
  • 1 1/2 Handful Arugula
  • 1/2 Handful Walnuts
  • 1 tablespoon Extra virgin olive oil
  • Sea salt
  • Pomegranate sour
  • Mixed seeds (chia seeds, sesame seeds, red pepper flakes, pepper corns)

Method

  • Step 1

    Spread toasts with whipped labneh.

  • Step 2

    Top them with smoked salmon & green tomato slices.

  • Step 3

    Combine arugula, walnuts & evoo in a food processor or blender. Add a pinch of sea salt and top smoked salmon with this pesto.

  • Step 4

    Serve the toasts with a drizzle of pomegranate sour, red onion slices & mixed seeds.
