"When you make a monthly trip to Whole Foods because you miss your city treats, and you score two bags of crushed ice from the cashier, you make tiki drinks, obvi! This one’s called, “The 39 Swizzle”, named after our 39th parallel here in Paonia. It’s a veryyyy loose interpretation of Jim McCourt of Prohibition in Charleston, South Carolina’s “The 56 Swizzle.” His features Jägermeister, lime juice, and orgeat, with fresh mint. Mine’s an Old Tom Gin and sage tiki cocktail. Layers on layers on layers of tropical and wintry flavors. It seems superfluous, but don’t neglect the final addition of Beaujolais on top, and if you don’t have any, another fruity, light-bodied red will do! Cheers, friends!!"

ingredients
- 1/2 ounce orgeat
- Sage, for muddling and garnish
- 1 1/2 ounces apple cider
- 1 ounce Ransom Spirits Old Tom gin
- 1 ounce lemon juice
- 1/2 ounce Laird's Applejack
- 1/2 ounce ginger syrup
- 1/4 ounce Amaro Montenegro
- 1/4 ounce Pierre Ferrand dry curacao
- 1/4 ounce Rothman and Winter orchard apricot
- 2 dashes cardamom bitters
- drizzle light-bodied red wine
Method
Step 1
In a tall glass, gently muddle a few sage leaves with the orgeat.
Step 2
Add the rest of the ingredients, save the red wine and the sage. Fill the glass 2/3 with crushed ice and stir or swizzle, incorporating well.
Step 3
Add more ice to mound over the top, drizzle with red wine, and garnish with a sage bundle.
