Paleo Vegan Raspberry Chia Thumbprint Cookies

"PALEO VEGAN RASPBERRY CHIA THUMBPRINT COOKIES I had a rather sour container of raspberries in the fridge that Mikey didn’t really eat, so this early morning I thought why not make Paleo Thumbprint Cookies. Although, as you can see, you can barely call them thumbprint, more like shot-glass-print. I made them BIG to fit in more raspberry sauce. Mikey and I were very happy to round up our savory breakfast with these babies (our papa is on a business trip this week, so he missed out on... I’ll have to treat him with something different once he is back ) #holisticzest"

  • 2 tablespoons melted coconut oil
  • 2 teaspoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 cup Almond Flour
  • 1 tablespoons coconut flour
  • Pinch Himalayan Sea Salt
  • 1 Jar Chia Raspberry Jam
  • 5 ounces raspberries, mashed


  • Step 1

    Mix maple syrup, coconut oil, vanilla extract, almond flour, coconut flour, and sea salt together.

  • Step 2

    The mixture turned out sticky but still rather crumbly, so using a shot glass as a mold really helped to shape these cookies.

  • Step 3

    Bake the cookies at 350 until golden and cool.

  • Step 4

    Mix together jam and mashed raspberries.

  • Step 5

    Spoon the chia raspberry jam into the center of the cookies.
