Grilled Veggie Sandwich

Ingredients:
1 baby eggplant, sliced in rounds
1 zucchini, sliced in rounds - 1 summer squash, sliced in rounds
2 portobella mushrooms, sliced
1 red bell pepper, cut in rings
1 green pepper, cut in rings
1 medium white onion, sliced
1/2 cup jarred roasted red peppers in water
1 can artichoke hearts in water, sliced
10 kalamata olives, pitted and sliced
2-4 Tbsp basil pea pesto or any other pesto you like
2 Tbsp vegan mayo
4 slices good vegan bread.
garlic salt and pepper to taste
Directions:
Cut all your veggies and season with garlic salt and pepper to taste.
Grill eggplant, zucchini, summer squash, portobella mushrooms, red bell pepper, green bell pepper, and onion in batches on a tabletop grill (or however you prefer to grill!). Mine took about 5 minutes per batch to get the right texture and good grill marks.
Lightly toast bread in a toaster. Spread pesto on 2 slices of bread and vegan mayo on the other 2 slices. Then, get to layering all your veggies!
