Pear & Ginger Upside-down Cake With Brown Butter

Ingredients
2 large sweet pears, quartered, then sliced into thick slices
1 cup butter
1 cup caster sugar
4 eggs
2 cups self-rising flour
1 thumb-sized piece of ginger, cut into small dice
1/2 teaspoon cinnamon
1/2 teaspoon mixed spice
2 tablespoons browned butter
Directions
Preheat the oven to 350˚F. Arrange sliced pears on the base of a 8-inch cake tin lined with parchment paper.
Beat together butter and golden caster sugar until light, pale and fluffy.
Slowly incorporate eggs and flour. Stir in ginger and spices. Slowly drizzle in the brown butter and mix to combine. Pour the batter over the pears and bake until golden brown on top and a skewer comes out clean. Allow to cool and then turn out onto a wire rack to cool completely.
