ingredients

  • 16 ounes al dente pasta
  • 1 pound thinly sliced smoked sausage
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion
  • 4 cloves minced garlic
  • 2 teaspoons red pepper flakes
  • 1 28 ounce can San Marzano tomatoes
  • 1 tablespoon freshly chopped basil
  • 1 tablepsoon freshly chopped parsley
  • 1 tablespoon freshly chopped oregano
  • 1/2 grated parmesan cheese
  • salt and ground black pepper, to taste

Method

  • Step 1

    Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

  • Step 2

    In a large skillet, heat the extra virgin olive oil over medium heat. Add the smoked sausage slices and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and red pepper flakes, sautéing for an additional 1 minute. Add additional extra virgin olive oil after browning the sausage, if need be.

  • Step 3

    Stir in the San Marzano tomatoes and bring the mixture to a simmer. Season the sauce with basil, parsley, oregano, salt and ground black pepper to taste. Let it simmer for at least 20 minutes to allow the flavors to meld.

  • Step 4

    Add the cooked pasta and browned sausage slices back into the skillet with the sauce. Toss well to combine, adding reserved pasta water as needed to reach your desired consistency. Generously serve with grated parmesan cheese.
