ingredients
- 1 pound boneless skinless chicken thighs
- 2 tablespoons vegetable oil
- 2 cloves of minced garlic
- 1 tablespoon grated ginger
- 1 large thinly sliced red bell pepper
- 1 large thinly sliced green bell pepper
- 1 pound thinly sliced shiitake mushrooms
- 8 ounces udon noodles
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
- for garnish sliced green onion
- for garnish freshly chopped cilantro
Method
Step 1
Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, cornstarch, sesame oil, and red pepper flakes. Set the sauce aside.
Step 2
Cook the Udon Noodles: Cook the udon noodles according to the package instructions until they are al dente. Drain them and rinse with cold water to prevent sticking. Set the cooked noodles aside.
Step 3
Sauté the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken thigh pieces and cook for 3-4 minutes per side until they are cooked through and have a golden-brown exterior. Remove the cooked chicken from the skillet and set it aside.
Step 4
Stir-Fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the sliced red and green bell peppers, along with the shiitake mushrooms. Stir-fry for 3-4 minutes until the vegetables begin to soften. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
Step 5
Combine Chicken, Noodles, and Sauce: Return the cooked chicken to the skillet with the sautéed vegetables. Add the cooked udon noodles to the skillet. Pour the prepared sauce over the chicken, vegetables, and noodles.
Step 6
Stir-Fry and Combine: Toss everything together in the skillet, ensuring that the sauce evenly coats the ingredients. Stir-fry for an additional 2-3 minutes, allowing the noodles to heat through, and the sauce to thicken and coat the ingredients.
Step 7
