ingredients
- 2/3 cup (100 grams) dark chocolate, melted
- 1 cup (120 grams) all-purpose flour
- Pinch of salt
- 1/3 cup (80 ml) warm milk
- 1 large egg, at room temperature
- 1 tablespoon (15 grams) granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Method
Step 1
Melt the dark chocolate and pour it into small disks on a baking sheet lined with parchment paper. Chill in the refrigerator until firm.
Step 2
In a mixing bowl, combine the flour and salt.
Step 3
In a separate bowl, whisk together the warm milk, egg, sugar, and vanilla extract.
Step 4
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
Step 5
Let the batter rest for 30 minutes.
Step 6
Heat a non-stick skillet over medium heat. Pour a small amount of batter onto the skillet to form pancakes.
Step 7
Place a chilled chocolate disk in the center of the pancake and cover it with a little more batter.
Step 8
Cook until bubbles form on the surface of the pancakes, then flip and cook for another minute or until golden brown.
Step 9
Serve the pancakes warm with your favorite toppings.
