Easy Beetroot Curry

"This is the perfect Beetroot Curry for an easy family dinner. I had the most amazing beetroot growing in my garden and I really wanted to do them justice. I absolutely love this recipe purely because of how quick and easy it is as well as being jam packed with flavour."

ingredients

  • 1 diced onion
  • 3 finely chopped cloves of garlic
  • 1 tbsp ground coriander
  • 1 tbsp mustard seeds
  • 1 tbsp graham masala
  • 1 large beetroot
  • 1 400ml can of coconut milk
  • 1 400g can of chopped tomatoes

Method

  • Step 1

    In a medium sized pot add your onion and garlic with a little bit of water to stop it from sticking. Once the onion is translucent add the ground coriander, mustard seed and graham masala and stir through until fragrant.

  • Step 2

    Next add your beetroot and stir to coat in the spices. Then add your coocnut milk and chopped tomatoes. Cover with a lid and leave to simmer for 20-25 minutes until the beetroot is tender.

  • Step 3

    Serve with fresh rice, salad and avocado.
