"Free from dairy, egg, gluten, soy, nuts, refined sugar
RECIPE
Place two 300g pieces of Atlantic salmon on a baking tray lined with baking paper skin side down.
Add the following to a bowl:
1/2 tsp fresh mint, chopped
1 tbsp fresh coriander, chopped
1 lemon, rind grated
1/2 lemon, juiced
1 clove garlic, grated
Thumb of fresh ginger, grated
1/4 tsp red chilli flakes
60g gluten free breadcrumbs (use breadcrumbs of your choice if not gluten free
2 tsp oilve oil
Freshly ground black pepper and salt to taste
Mix well and press crumbs on top of each piece of fish using your hands. Place in a conventional oven at 180C for 15 minutes (fish will be cooked medium).
We recommend serving with our *cucumber raita (providing no dairy intolerance) and cooked quinoa."
